Dorothy's Caramel Apples

  • 1/2 lb. butter
  • 2 c light corn syrup
  • 2 c sugar
  • 2 15 and 1/2 oz cans
    sweetened condensed milk

  • 1/2 c flour
  • 1 t vanilla
  • Apples
  • Chopped pecans, optional

In a heavy saucepan, over medium heat, melt butter. Add corn syrup and sugar.
Bring to a boil and boil for 5 minutes, stirring constantly.
Combine flour with ½ can of sweetened condensed milk.
Add remaining milk and flour mixture to pan. Heat mixture until it reaches 235°F on a candy thermometer,
stirring constantly. Be very careful, mixture will be HOT! Remove from heat and stir in vanilla.
Cool mixture until it is thick enough to dip apples. Dip apples in mixture, then roll in pecans, if desired.
Cool on wax paper. If mixture becomes too thick, warm up a little or add a little water. Left over caramel makes delicious candy.

Linda's Apple Muffins

  • 2 c flour
  • 4 t baking powder
  • 1/2 t salt
  • 1/2 c sugar
  • 3 T melted shortening, cooled
  • 1 Egg

  • 3/4 c milk
  • 1 c finely chopped apples
  • 1/2 c light brown sugar
  • 3/4 t cinnamon
  • 1/2 c chopped nuts, optional

Preheat oven to 375°. Sift together flour, baking powder, salt and sugar.
Beat egg; add milk combined with melted shortening. Add to dry ingredients with apples.
Stir until barely combined (15-20 strokes). Place in buttered muffin tins. Mix brown sugar,
cinnamon and nuts; sprinkle over tops of muffins. Bake 20 minutes, until brown.
